Preserved Memory (23’)

Our second vintage of this cuvée blends Northern Spy & Cox Orange Pippin apples with organic lowbush blueberries. First, we co-fermented cider with crushed blueberries from Lost & Found Farm for 27 days. Then we racked this fusion of fruits and aged it in fresh dumped bourbon barrels for 12 months. The bourbon barrel helps highlight the woody and dark fruit flavors of the cuvée. After a year in oak the blend features notes of boysenberry, lavender, bourbon wood, with aromas of vanilla and caramel to tie it all together. It’s a blend that showcases the essence of a singular harvest and the hard work of our friend Lauren Bruns who stewards blueberry barrens organically around Gray and Dresden, Maine. For us, this bottling can preserve the memory of a harvest. A way to capture this flavor and share it for years to come.
